High-altitude wines have a high concentration of polyphenols and esters.
This gives them a much higher concentration of color, as well as a more complex and peculiar aroma. These wines are cultivated on the eastern slopes of the Andes Mountains surrounding Cafayate and Yacochuya — 6,600 feet above sea level.
